Make your own magic truffles with mushrooms
Last month we had a lovely interview with Eurydice Held from witch’s cauldrons. During our conversation we of course asked if she would share a delicious recipe with us.
One of her favorites? The famous Magic Truffles with Mushrooms. A simple yet enchanting dish: golden-brown baked potatoes with a creamy sauce, fragrant herbs, and perfectly sautéed mushrooms.

Recipe: Magic Truffles with Mushrooms
(2–4 servings)

Ingredients
6 medium potatoes
1 lemon
250 ml crème fraîche
250 ml cottage cheese
300 g grated cheese
Mushrooms of your choice
Oil
Rosemary
1 bunch parsley
Thyme
Garlic to taste
Salt and pepper
Butter
👩🏾🍳 Preparation
1. The Magic Truffles 🥔
Wash the potatoes thoroughly and boil them in water for about 15 minutes so they soften slightly. Drain them and let them steam dry for a moment.
Prick holes all around the potatoes with a fork and rub them with oil, salt, pepper, and ground garlic.
Wrap each potato individually in aluminum foil and place them in an oven dish with a small layer of water.
Bake them in a preheated oven at 180°C (356°F) for about 30 minutes. Check if they are cooked through and extend the baking time if necessary.
For a crispy skin, place the potatoes back in the oven without foil for about 10 minutes.
2. The Magical Sauce ✨
Mix the crème fraîche and cottage cheese with:
lemon zest
lemon juice
finely chopped parsley
garlic
salt and pepper
Finally stir in the grated cheese for an extra creamy and rich flavor.
3. The Mushrooms 🍄
Fry the mushrooms in oil or butter with:
rosemary
thyme
garlic
salt and pepper
Cook them briefly so they stay firm and juicy.
4. Serving
Slice the potatoes open lengthwise and place a knob of butter inside.
Spoon the sauce and sautéed mushrooms over the potatoes and sprinkle with some extra parsley.
